Mother's Day Brunch (pay attention dads)

Mimosas for Moms  (a favorite of mine)  serves 6

1 bottle Champagne or sparkling Apple Juice
1/2 gallon Orange juice
6-8 Strawberries

Mix 1/2 glass champagne and 1/2 glass orange juice in flute.  Put a strawberry in each glass.  Enjoy!

Ham & Egg Brunch Casserole   serves 6-8

6 slices of bread layer in 9x13 pan
1 doz eggs (with or without yolks)
1 lb ham cubes
1 tsp  dry mustard
1 T chop onion
1 1/2  cup  half & half  
1 package frozen brocolli or other vegtable
8 oz Swiss cheese shredded
8 oz  Cheddar cheeses shredded
1/2 tsp sea salt (or regular salt)
1/2 tsp pepper

Layer bread in 9x13 pan.   Crack eggs in bowl add, mustard, onion, half&half, salt, pepper.  Beat until mixed set aside.
Place layer of brocolli over bread, layer of cheese over brocolli, another layer of cheese, then pour egg mixture on top.  Bake at 350 for 35-45 minutes.  Top should be lightly brown and egg batter cooked in middle.

Apple Cinnamon French Toast Casserole

12 slices of bread
2 eggs
1 cup  milk
2 tsp cinnamon
1 can Wilderness Apple Pie Filling
Maple pancake or waffle syrup
cooking oil

Mix eggs, milk, cinnamon in medium bowl.   Dip bread both sides and place in frying pan with 1 T oil.  Repeat until all French toast is cooked.  Put on plate and cut into 4-5 strips.  Place in casserole dish. Cover with can of Apple pie filling.  Pour 1 cup syrup over top.  Bake for 20-30 minutes at 350 degrees. Serve with cool whip, raisins or strawberries as garnishment if desired
